Szechuan Tofu

From the Astoria Co+op Deli

1 block extra firm tofu (we use the bulk tofu, a little less than a pound)
1 TBSP tamari
1 TBSP sesame oil
2 TBSP sherry, sake or white wine
½ tsp sriracha or other hot sauce
¼ tsp garlic granules
¼ tsp ginger powder

Mix all liquids together and add spices. Cut tofu into ½ in cubes. Gently toss tofu in sauce until well coated. Lay tofu in single layer on baking sheet and cover with remaining sauce. Bake at 350 for 20-25 minutes until browned, stir halfway through.

Yield: slightly less than one pound, 2-4 servings
