Chicken Salad

From the Astoria Co-op Grocery Deli

1 pound chicken
2 stalks celery
1 small cucumber
3/4 C mayo
3/4 C grapes
1/2 tsp salt
1 tsp pepper

Bake chicken at 350 for about 15 minutes, until internal temperature reaches 165. Allow chicken to cool, then cut into small cubes. Chop celery and cucumber into bite sized pieces. Cut grapes in half if desired. Gently mix all ingredients.
