Basic Kale Salad

From the Astoria Co-op Grocery Deli

1 bunch kale, stem removed ripped into bite sized pieces
¼ pound/2 cups spinach
¼ red onion, thinly sliced
¼ cup nut of your choice
¼ cup dried currant, or other dried fruit
1-2 pieces dried mango, cut into tiny pieces
2 TBSP balsamic dressing
¼ cup olive oil
1-2 cloves garlic, minced
Pinch salt and pepper

Optional ingredients: 1cup shredded carrots, 4-8 oz crumbled feta, ¼ cup additional roasted seeds or nuts, fresh berries, diced avocado, lemon juice or other vinegar in place of balsamic.

In a closed container shake vinegar, oil, garlic, salt and pepper.

In a bowl toss all ingredients together and pour dressing over, tossing again to coat
Yield 2-3 dinner servings or 4-5 appetizer portions
