This recipe is quick, healthy, and easily rivals the beef and broccoli found at a Chinese restaurant. And at $3.75 per serving (serves 4) which includes organic and top quality ingredients, how can you go wrong?
In a small bowl, make your sauce by mixing the following ingredients until smooth:
2 Tablespoons water
2 Tablespoons cornstarch
1/3 cup soy sauce (or tamari for gluten free)
2 cloves minced garlic
Tablespoon fresh ginger, grated
In a medium high skillet, add a few tablespoons of olive oil and saute:
1 small onion sliced thin
Approx. 1 lb. stir-fry beef from Knee Deep Cattle Company
Add:4 cups broccoli (cut thick stalks off bottom and then cut the rest into bite-size pieces)
Stir fry for a few minutes until meat starts to brown on both sides, then add your sauce. Reduce heat and simmer until broccoli is desired tenderness. Add salt and pepper to taste if you wish.
This recipe goes great with a side of brown rice. Start to finish, you should be done cooking in under 30 minutes.
