1 lb. farfalle pasta (bow-tie or another shape you like)
1 bunch radishes sliced thin
1 bunch broccolini chopped
1/2 red onion, minced
1/2 cup sunflower oil (or extra virgin olive oil)
1/2 cup apple cider vinegar
1 teaspoon salt
1 teaspoon pepper
Cook pasta until al dente, drain and cool. Chop vegetables and add to pasta. Mix oil, vinegar, salt and pepper and pour over pasta. Mix well and portion. Makes about 8 servings at $1.32 each.
Broccolini is high in calcium, iron, and fiber. Radishes eliminate toxins, protect against cancer, and can help relieve bloating and indigestion.
Sometimes the best recipes happen by accident. Michelle from our deli originally created this dish at home using ingredients she had in her refrigerator. She liked it so much, she brought a sample to Sam, our deli manager, and he approved it for our grab-and-go deli repertoire. And now you can make it at home too!
